You guys. If you’re a fan of chewy bars, this treat is for you. Made with Golden Barrel Light Corn Syrup, the oatmeal-based bars are soft and chewy. And the chocolate topping–yum. It’s simply melted chocolate chips, peanut butter and a splash of vanilla extract. Seriously finger-lickin’ good.

These bars are super easy to whip up and only require about 20 minutes in the oven, making them a perfect go-to snack or a treat to bring along to a friend’s house. They won’t last long. I gave Finn a piece to try and he was quickly asking for another one. They’d also make the perfect after-school snack.

Ingredients

Bars

  • 1 cup (2 sticks) butter, softened
  • 1 cup Golden Barrel Light Brown Sugar
  • 1/2 cup Golden Barrel Light Corn Syrup
  • 1/2 teaspoon salt
  • 4 1/2 cups quick oats

Topping

  • 1 3/4 cups chocolate chips
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract

Instructions

Bars

  1. Preheat oven to 350 degrees.

  2. In the bowl of a stand mixer, cream together butter and brown sugar until light and fluffy, about 3 minutes. Add corn syrup and mix until incorporated. Remove from stand mixer and mix by hand the oatmeal and salt, until combined. Pour mix into a greased 9x13" pan. Bake for 20 minutes or until the edges start to bubble. Let cool slightly.

Topping

  1. Melt chocolate chips and peanut butter in a double boiler bowl over stove, stirring until completely melted. Turn off heat and add vanilla extract. Spread over oatmeal bars. Cool before cutting and refrigerate.

    I want to make these ahead of time for Thanksgiving. If I make on Saturday, how should I store them until Thursday? In a tin or in refrigerator? Or both?

    Thanks for the recipe! My family has an adaptation where we layer the pb and chocolate separately. The pb spreads easily on the somewhat warm but hardened oat layer, and then we sprinkle choc chips and stick it back in the oven for a minute, and then the chocolate spreads into a thick hom*ogenous layer. Delicious either way!

    Not sure if I did something wrong… But this batter was very thick and unable to pour into the baking pan.

      Nothing, it will be like a mealy oatmeal texture that can be easily formed to your pan. Form it by pressing in areas and making it even. Then put it in oven top shelf, wait for edges to bubble (20mins). Take out and cool. Baine Marie method water in pot, stainless bowl on top with chocolate chips and peanut butter. Melt till glossy turn off heat and add vanilla. Pour onto cooled off baked oatmeal. Spread evenly with spatula. Cool then cut and refrigerate
