Everybody is all aquiver about these things.

So what is a Keto Chaffle anyway – it’s new enough that spellcheck doesn’t even think its a word.

When I first heard about them I thought, “oh a Keto Waffle made with cheese.”

But then I thought “hey wait a minute Keto waffles are already made with cheese.”

So I had to try them to see what all the buzz was about.

A Keto chaffle is like a waffle-shaped crispy fried cheese omelet

And of course I had to make an extra special Castle in the Mountains version.

Here at the Castle, we love our spice so jalapeno and cheddar were the natural choice for our first Keto chaffle recipe.

Does this still sound a little bizarre?

Yeah, but trust me when I say that you should try them.

They are quick and easy to make. Plus, they are freaking delicious.

This is one of those good recipes that just happens to be Keto.

If you are not Keto and you just stumbled onto this recipe, try it anyway – you’ll like it I promise.

Maybe after a chaffle or two you will decide that you want the benefits of Keto.

But let’s not get ahead of ourselves.

First let’s make some chaffles.

There are only 5 ingredients and this recipe is so easy because basically you mix 4 of them and fry them in the 5th.

You will need a Waffle Iron

You can get a good waffle iron for less than $20 at Target or Walmart.

But if you don’t want to go out and get one here’s a good one from Amazon

Recipe Tip: Keep it Simple.

I have seen a bunch of these recipes, and there are some that will tell you put half the cheese in the waffle iron, and then put half the egg mixture on top of that and then the other half of the cheese, and the rest of the egg.

I tried it this way, and if it is better I cant tell.

The easier way to do this is just mix all the ingredients except the oil and then put it all in at once and spread it around.

Recipe Tip: How to Grease the Waffle Iron

There are a couple of good tips here….so please read them before you send me an email saying ” These don’t work!” or “You suck! These stick to the iron!”.

First: To make your chaffles easy to remove you should grease the top of the waffle iron just before you close it.

Grease the bottom of the iron, and then close it while you are mixing the other ingredients.

Open and add the ingredients, spread them out and then just before you close it grease the top of the waffle iron.

Second you have a choice of how you apply the oil.

I use a brush because that is what I have always done it because that is the way my dad did it when he made waffles when I was a kid.

I am a silly ole creature of habit that way.

The other option – probably the better option – is to use a cooking spray or an oil spray bottle.

This way is probably faster, easier and less messy.

Recipe Tip: Make sure you cook them long enough.

During my first attempt at chaffles, I put all the cheese and the eggs and so forth in the waffle iron, closed it and waited for the light to come on just like with waffles.

At that point when I opened it, some stuck to the top some to the bottom and I don’t think any of it was crispy.

I just shut it again, and waited for another two or three minutes.

When I opened it again, it took some effort to get my chaffles out, and it was a mess – a delicious mess, but a mess nonetheless. (hey that rhymes)

On my next attempt I just let it cook the whole time, and this time they came out in one piece – crispy and golden brown.

I think it would be really hard to burn these, so I would suggest that if you are in doubt leave them in a little longer so they come out crispy like this…

Recipe Tip: Substitutions

Jalapenos: Even though it is hard for me to believe there are some of you out there who don’t like spicy food, maybe some of you don’t like them.

That’s not a problem, you can just leave out the jalapeno.

If you would still like the Mexican flavor, add a 1/4 tsp. of chili powder.

Sharp Cheddar:If you like a milder cheese I would suggest a queso blend or just mild cheddar.

Almond Flour: I would not recommend substituting for the almond flour. I have seen some chaffles recipes that have the almond flour listed as optional.

Serving Suggestions

And now the moment you’ve all been waiting for…the eating.

The first thing I always recommend is to use your imagination. I am sure beyond a doubt that you know what you like better than any Keto blogger – even me.

That being said, here are some suggestions from the Castle in the Mountains.

Plain:

You see the Keto Chaffle in the pictures with the tomatoes and the sprinkle of shredded cheese. Basically eating them plain.

They are good enough that you can just eat them right out of the waffle iron. You won’t be disappointed.

Keto Chaffle Taco:

Top them with some taco meat – shredded pork or whatever – cheese, sour cream, and salsa. Fold them like a taco and enjoy.

Keto Chaffle Breakfast Sandwich:

Put the tomatoes along with eggs, cheese and maybe a little lettuce and mayo on one of them and the other on top. You got yourself fantastic keep-you-going breakfast sandwich.

Keto Chaffle Lunchbox Sandwich:

Remember the pre-Keto days when you built a sandwich on two slices of bread ?

Maybe you even made homemade bread – and then you built your sandwich with the meat and cheese that would make your mid-day repass just lovely?

Well, do that except think of these chaffles as two slices of jalapeno cheddar bread.

Instructions

  • Heat up the Waffle Maker.

  • In a small mixing bowl, mix the egg, hotsauce if using, almond flour and cheese.

  • Use the olive oil to thoroughly grease the waffle iron.

  • Pour the batter in the center of the waffle iron and spread it evenly towards the edges.

  • Before closing the waffle iron, thoroughly re grease the top of the iron.

  • Close the waffle iron and wait. These take quite a bit longer to cook than regular waffles, so when the light goes on indicating that they are done, wait another 2 minutes before opening.

  • Wait 2 minutes more minutes after the light goes on to remove and enjoy.
